The Red Garlic of Nubia - Paceco

The cultivation of this particular type of garlic, with a very strong flavor and widely used in the local cuisine, started in Nubia, a small village that belongs to the territory of Paceco.

How to recognize it – The different sized bulbs are covered by external white-pink tunics in contrast with the deep red of the internal tunics from which its name derives.
After being reaped in June, processed and packaged, it is ready to be sold in the local markets and to the wholesalers. It can be bought in various ways: in bulbs, powdered, in cloves, in jars or in tubes.

Garlic braids – It is likely to find the garlic sold in long "braids". According, to tradition bulbs have to be manually braided and preserved in this way.
It is a excellent product because of its high quality and uniqueness. It is also known for its healthy qualities: it reduce naturally the blood pressure.
It is typically used for pasta with the pesto alla trapanese or pasta "cull'àgghia" (pasta with garlic)
